Peanut Butter Bread

I came across this post today on Reddit.

This is Peanut Butter bread, not bad, I need to tweak it a bit, the bread, even after 3 days is still really moist, mainly due to the peanut oil, it is also only about 1.5 inches thick. While it works perfect to make finger sandwiches it is not yet ideal for real sandwiches, but I will update if I figure it out.

It cuts just like bread, smells wonderful while baking and has the consistency of a lighter than normal pound cake.


A slice of cheddar cuts into thirds, a rolled up piece of lunch meat (black forest ham in this case) and you have yourself a nice little lunch.

Chicken Cordon Bleu.

So, Friday is here and have I got some Food Porn for you!

The wife says "hey honey how about some chicken cordon bleu?" I say, "great", we make this!

Chicken breasts, beaten out to a nice even quarter inch thickness.
2 slices of black forest ham.
1 mozzarella cheese stick.
1 slize of thick bacon.

Wrap it all up, secure with toothpicks and bake at 350 for 50 minutes.



Add a side of green beans and loaded cauliflower (cheese bacon and butter) and you have yourself a meal.



For what you see on the plate we get about 4 grams of carbs, 2 from the ham, and 2 from the cauliflower.

Absolute Yum Yum!

New Year Update.

Hot and Damn!

OK, It has been a little over 6 weeks since I updated, xmas, wife being pregnant, 18 hour work days and kids = ZERO time for updating this here blog.

However I have not forgotten about the 300 people a day who are here looking at the blog.

So on with the post.

I am going to get this out of the way now, I have lost a lot of weight, I am now down to 384 pounds, that is another 14 pounds since before xmas. This brings the weight loss total to 36 pounds! Total time on keto is about 10 weeks., 2.5 months, 75 days, you pick your unit of measure. Do the math on that and we are looking at 2.08 pounds per day, this is about 60% water weight though I have lost a good bit of the thick fat layer.

While the size is not as easily seen I can certainly feel it. From my perspective the only difference is that my knees hurt less, my clothes fit looser and my belt is now almost wrapped back around to my back instead of my side. Getting up and down is now much easier, doing simple things like sitting in the truck is much easier, grocery shopping is no longer a marathon race (as far as my heart and lungs are concerned).

Without further brain puke I present to you, the picture.

I tried to get it as close to the original as possible.

10 weeks in.

So there we have it, from now on I plan to update at least once a week, more if possible.
I will eventually get the rest of the family unit to post as well, after all my wife is scheduled to lose about 9 pounds at the end of next month, it's a girl.

Sadly his last class here, while they have great instructors they are a McDojo and as such I am taking them out of the class and looking for a real school.
